I never realized an oven could make such a difference. Every day, our kitchens prepare meals for 3,000 students, 1,500 neighboring elementary school children and 500 staff members. We work hard to create menus that engage our diners. That adds up to a lot of volume, variety and accountability, so our kitchens must be flexible and efficient. And if the food doesn't taste good, no teenager will ever come near it.
