Gentle steam cracks tough lobster test

Since 1957, Carmen's Family Restaurant in Hazleton, PA, has been a popular restaurant serving Italian American cuisine. Looking to improve menu flexibility and speed in his kitchen, owner, Carmen DeLese Sr. purchased a Cleveland SteamCraft Ultra 3 convection steamer. Carmen uses the steamer to prepare and serve a variety of traditional Italian dishes, including lasagna, where steam gently gels the egg, cheese and other ingredients to tantalizing perfection. Among the many seafood specialties produced in the steamer are a New England clam bake of clams, shrimp, scallops and potatoes, and lobster dishes. Carmen reports that seafood items cooked with the Cleveland steamer retain more moisture and flavor than other cooking methods.
